Ein cremiges, veganes Tomatenrisotto mit veganen Patties und Frühlingsgemüse – ach so lecker. Ich habe mir jetzt Cup-Messbecher gekauft und musste sie gleich ausprobieren. Herausgekommen ist dieses köstliche Risotto und die leckeren Patties. Ich kann solche Cup-Messbecher echt empfehlen, vor allem wenn man viel durch englischsprachige Rezepte scrollt. Denn das Umrechnen in Gramm war für mich einfach furchtbar. 😋🤗

Das Risotto ist so cremig, obwohl es nicht einmal Käse enthält. Auch der Wein fehlt, also auch perfekt für Kinder geeignet. Durch die Tomaten und die Gemüsebrühe bekommt es eine gute Würze. Ich hätte es am liebsten alleine aufgegessen.

Die Patties erinnern mich von der Textur und vom Aussehen sehr an Frikadellen, oder auf österreichisch an „Faschierte-Laibchen“. Sie schmecken unglaublich gut, auch kalt sind sie der absolute Hammer. Ich habe sie auch schon als Burger Patties gemacht und die Burger waren einfach grandios. 🤗  So jetzt genug von mir. Hier das Rezept:


Zutaten für 2 Personen

Tomatenrisotto

125g Risotto Reis
250ml passierte Tomaten
250ml Gemüsebrühe
1/2 Zwiebel
1 Knoblauchzehe
1 große Tomate
etwas Olivenöl
Salz und Pfeffer

Patties

1 Cup Sojagranulat
1/2 Cup Kichererbsenmehl
3/4 Cup kochendes Wasser
2 EL Ketchup
2 EL Sojasauce oder Tamari
1 EL Erdnussbutter
1 TL Hefeflocken
1/2 TL Basilikum und Oregano
1 Knoblauchzehe

Zubereitung

Patties

  • Schäle und presse deine Knoblauchzehe durch eine Knoblauchpresse.
  • Vermische in einer Schüssel dein Sojagranulat, die Hälfte des Kichererbsenmehls, das Wasser, Ketchup, Sojasauce, die Kräuter und den Knoblauch miteinander und lasse alles für 20 Min. ziehen.
  • Füge die Erdnussbutter, die Hefeflocken und das restliche Mehl hinzu und forme daraus deine Patties.
  • Erhitze ein wenig Öl in einer Pfanne und brate die Patties auf jeder Seite für ungefähr 4 Min.

Risotto

  • Schäle und schneide deine Knoblauchzehe, sowie deine Zwiebel klein.
  • Schneide deine Tomate in kleine Würfel.
  • Erhitze ein wenig Öl in einer Pfanne und brate die Knoblauchzehe und den Zwiebel glasig.
  • Füge den Reis hinzu und brate ihn ebenfalls für ca. 30 Sek.
  • Lösche deinen Reis mit den passierten Tomaten und der Hälfte der Gemüsebrühe ab.
  • Sobald dein Reis die Flüssigkeit aufgesogen hat, füge die restliche Gemüsebrühe, sowie deine klein geschnittene Tomate hinzu. Rühre dabei ständig um, damit dir nichts anbrennt.
  • Hat dein Reis die Flüssigkeit erneut aufgesogen, füge bei Bedarf noch Flüssigkeit hinzu, ansonsten schmecke dein leckeres Risotto mit Salz und Pfeffer ab.
  • Serviere dein Risotto mit den Patties und Gemüse deiner Wahl
  • Guten Appetit.

Tomato Risotto with vegan Patties and Vegetables

Creamy tomato risotto with vegan patties and spring vegetables – oh it´s so tasty. I bought a cup messure set and wanted to try it. This is the result. I can absolutely recommend such a messure set. I often search for new inspirations on many english written sites and it was so annoying to convert cup messurements to grams. 😋🤗

The risotto is really creamy allthough it doesn´t contain any cheese. Even wine is missing, so it´s perfect for children too. The fresh tomato and vegetable broth give the risotto the fine taste. I love nothing better than eating the whole risotto alone.

The patties remind me on normal beef burger patties. They taste incredibly good. Even cold they are georgeous. I made this patties for burgers too and I can tell you, the burgers were so delicious. So please the recipe a try and tell me what you think.


Ingredients for 2 persons

Risotto

125g Risotto rice
1 cup sieved tomatoes (passata)
250 ml vegetable broth
1/2 onion
1 garlic clove
1 big tomato
olive oil
salt and pepper

Patties

1 cup soy granules (TVP)
1 garlic clove
1/2 tsp dried oregano
1/2 tsp dried basil
3/4 cup boiling water
1/2 cup chickpea flour
2 Tbsp ketchup
2 Tbsp soy sauce or tamari
1 tbsp peanut butter
1 Tsp nutritional yeast

Instructions

Patties

  • Peel and press garlic with a garlic press.
  • In a bowl mix together soy granules, 1/4 cup of chickpea flour, herbs, ketchup, soy sauce, garlic and boiling water.
  • Let it sit for about 20 min.
  • Add nut butter, remaining flour and nutritional yeast and mix thoroughly.
  • In a skillet add a little bit of oil.
  • Form patties and cook patties in skillet for about 4 min on each side.

Risotto

  • Peel and slice onion and garlic finely.
  • Chop tomato into small cubes.
  • Add olive oil in a large skillet, on a low-medium heat.
  • Sauté the onion for a few minutes before adding the minced garlic and cooking for another minute.
  • Stir in the rice and stir for approx 30 sec, to coat it in the oil.
  • Pour in the passata and half of the vegetable stock.
  •  Allow each amount to be absorbed by the rice before adding the last half of the vegetable stock and your chopped tomato.
  • If the rice has absorbed all the liquid give everything a stir, adding more liquid if needed. If your rice is done season with salt and pepper.
  • Serve with your patties and vegetables of choice.
  • Enjoy!
